In December 2017, Mahogany Bay Resort on Ambergris Caye, Belize, officially opens its doors. It’s the island’s first major branded hotel and Belize’s first Hilton property, as Mahogany Bay Resort is part of the Curio – A Collection by Hilton properties.
The property is located south of the island’s main town of San Pedro and offers what Mahogany Bay dubs as a “townlet” experience. You’ll find shops, restaurants, and other services laid out in more of a community versus a hotel resort.
Mahogany Bay features 205 cottage-like hotel rooms that feature tall ceilings and local touches like sustainably harvested wood from Belizean forests. The style and décor are a nod to Belize’s British Colonial past.
Mahogany Bay is not located on the beach; however, guests will have access to the resort’s private beach club which is accessible by a short private boat ride. On site, there is a 15,000-square-foot Miami-style pool and a bar known as The Bay Club. Mahogany Bay’s Great House is the centerpiece with three levels open for guests, residents, and visitors. It’s said to the largest wooden structure in Belize, and features 22,000 square feet, with an 8,000-square-foot ballroom, perfect for events and weddings.
Shaken is the resort’s bar overlooking the pool, while Stirred is the bar adjacent to the reception lobby of The Great House. Vu Jadé will be the primary resort restaurant, offering indoor-outdoor seating and a menu of local specialties. Some lucky guests may also get an invite to Gadfly’s, the exclusive social club and cocktail lounge located in the attic are of The Great House. Here you’ll find some of the best views of the property.
The village area is popular with tourists and locals who enjoy grabbing gourmet coffee at Rum + Bean or sushi at JYOTO, the island’s first dedicated Japanese Restaurant and Sushi Bar. Other food options include a taco shack for delicious Belizean breakfast tacos and The Hive, which offers quick-service healthy food options. The grocery store for the townlet is The Farm House Deli, filled with homemade breads, artisanal cheeses, and local smoked and cured meats. Ambergreens is the first aquaponics farming venture in the country, and has a 2,400-square-foot greenhouse that offers organic, non-GMO, farm-to-table greens and vegetables for Mahogany Bay’s restaurants.
Services in the townlet include fishing tour and scuba diving operators, a nail and hair salon, and a science and soul wellness center. In the wellness center, you can try aerial yoga, shiatsu massage, or Ayurvedic treatments.
If you aren’t familiar with the name, Hilton has the Curio brand, which is a unique selection of specific hotels that appeal to travelers seeking local discovery. It was launched in 2014, and the global portfolio has more than 30 hotels and resorts that were handpicked for their ability to embody the distinct culture and spirit of the local community. Hotels aren’t bound by specific build designs and they apply to be part of the Curio Collection. These properties are independent, but offer guests the Hilton Honors benefits they care most about.
